Brioches con esubero di licoli

In occasione della preparazione del Pandolce Genovese, mi sono ritrovata per l’ennesima volta con un esubero di licoli. Io raramente lo butto. Di solito ci preparo del pane simil arabo, a volte mi butto sui crackers o i grissini ma sono una che si stufa facilmente e così questa volta ho deciso di buttarmi su qualcosa di dolce, tanto per addolcirmi la giornata. Ecco che quindi mi sono messa a spulciare ricette qua e là ma alla fine mi sono decisa a fare di testa mia, un esperimento veloce spinta dalla certezza che comunque vada e qualunque ingrediente uno aggiunga, alla fine l’impasto lievita sempre. Ci potranno magari volere ore in più ma ad un qualche risultato si arriva.
Questo è quello che è venuto fuori. Certo non sono cornetti sfogliati, non c’è nemmeno il burro, ma per colazione, magari ripieni di nutella home made come questi, vanno più che bene.

 

 

Ingredienti:
Per le brioches
350 g di farina Petra 1
100 g di esubero di licoli appena rinfrescato
120 g di latte intero fresco
130 g di zucchero
Un cucchiaio di miele
Un uovo
Zucchero e latte per decorare
Per la simil Nutella
60 g di nocciole
60 g di cioccolato al latte
40 g di cioccolato fondente
100 g di zucchero
70 g di burro
100 g di latte intero fresco
Un bel cucchiaio di questo praliné
Appena rinfrescato il licoli
mettete via quello da riporre nuovamente in frigo e fate riposare per una quindicina di minuti l’esubero da usare per le brioche. Mettetelo poi nella ciotola dell’impastatrice e scioglietelo in un po’ del quantitativo del latte a temperatura ambiente (mettetene un po’ per volta, al bisogno). Aggiungete la farina, lo zucchero ed il miele e incominciate ad impastare a bassa velocità. Solo alla fine aggiungete l’uovo e continuate  finché l’impasto non sarà incordato. Mettete a riposare per una mezz’ora e quindi tirate l’impasto abbastanza sottile formando un cerchio nel quale inciderete i triangoli con un coltello molto affilato oppure con la caccavella apposita. Depositate un cucchiaino di nutella nella parte alta dei triangoli e poi arrotolate fino a formare i cornetti. A questo punto spennellateli di latte tiepido e metteteli a lievitare all’interno del forno con la cucina accesa fino a che non raddoppiano. A me ci sono volute 6 ore ma se è molto freddo ce ne possono volere anche una decina.
A lievitazione avvenuta spennellateli nuovamente con il latte, spolverizzateli ben bene con lo zucchero ed infornateli in forno funzione statica preriscaldato a 180° per 15/20 minuti circa.
Per la simil nutella è necessaria una piccola precisazione: il sapore è ottimo, a noi piace molto più della nutella vera e poi il praliné le dà anche una marcia in più, però la consistenza non è esattamente come quella industriale e quindi tende a sciogliersi e a colare fuori dai cornetti. Le scelte sono due: o vi comprate la versione originale oppure fate come noi e leccate tutta quella che fuoriesce e poi, eventualmente, una volta cotti, se la dose di cioccolato non vi saziasse, li aprite e ne spalmate ancora.

Per la simil nutella frullate le nocciole con lo zucchero in un mixer quindi, in un pentolino antiaderente, riscaldate il latte con il burro a fuoco bassissimo, aggiungetevi il cioccolato sciolto al microonde o a bagnomaria, la polvere nocciole e zucchero, un’altra mescolata e poi via dal fuoco. Aspettate che si freddi un pochino quindi incorporatevi un bel cucchiaio di praliné e travasate in un barattolo che poi metterete in frigo. Si conserva per 2, massimo 3 settimane ma a noi non dura mai così a lungo!

Awaiting to prepare my Pandolce Genovese, I have found myself, again, with a part of my liquid sourdough starter which I should throw away after the refresh but I rarely do it. Sometime I prepare pita bread, sometime crackers or bread sticks but I’m already bored with these recipes so this time I have decided to cook something sweet to sweeten the day. So, after a quick search here and there I have decided to put together a recipe because I know that a way or another, one hour more or one hour less, the dough will finally raise. These brioches are the result.
Obviously they are not croissants (that’s not even butter in the ingredients) but for breakfast, spread with jam or nutella, they are just fine.
Ingredients:
For the brioches
350 all purpose flour
100 g of liquid sourdough starter just refreshed
120 g fresh all fat milk
130 g sugar
A tablespoon of honey
An egg
Sugar and milk to decorate
For the nutella
60 g of hazelnuts
60 g of milk chocolate
40 g of dark chocolate
100 g of sugar
70 g of unsalted butter
100 g of fresh full fat milk
A tablespoon of this praliné
Just after you have refreshed your liquid sourdough starter, put away the starter you are going to keep in your fridge and let the starter you are going to use for the brioches stand for 15 minutes. Put in in your stand mixer bowl and mix it with the lukewarm milk but not all of it. Keep a bit just in case you need it. Add the flour, sugar and honey and begin to knead at low speed. Only at the end add the egg and continue to knead until the dough will be smooth and elastic. Let it rest for half an hour then roll it out to form a circle you will cut by a knife in triangles. Fill the upper part of the triangles with a teaspoon of Nutella and then roll them up to form the croissants. Brush with lukewarm milk and leave to raise inside your oven with the light on until they double. With this unusual warm weather it took only 6 hours but if it’s really cold it could take easily 10. When they have raised brush again with milk, sprinkle it well with grain sugar and bake in preheated oven at 180° for 15/20 minutes.
For the home made Nutella I have something to say. Although the taste is great, even greater than the industrial version, especially with the praliné, the texture is a bit creamier so it tends to melt and come out a bit from the brioches. The choices are two: either you buy the original or you do as we do and lick all over what’s coming out and then, when the brioches are cooked and cooled, spread them again with the Nutella home made.
For the Nutella hand made blend the hazelnuts together with the sugar then, in a non sticking saucepan, heat the milk and butter on a very low heat, add the chocolates you will have melted in the microwave, the hazelnuts and sugar and take immediately out of the heat. Wait for the Nutella to cool, stir in a tablespoon of praliné, pour in a jar and store it in the fridge. It will keep for two, maximum 3 weeks but trust me, it never last that long!
